This is a classic British recipe from the 1950s celebrating Queen Elizabeth II’s Coronation. It was a big lunch party favourite back then and a fabulous family picnic dinner now.
With everyone loving “The Crown” why not emulate the woman’s lunch? We can all be queen for the day.
INGREDIENTS FOR CORONATION CHICKEN
It’s a fun list of ingredients for this simple coronation chicken recipe.
- mayonnaise
- lemon juice
- apricot preserves *no sugar added*
- curry powder
- cooked chicken
- slivered almonds *omit for nut allergies
- green onion
- chopped cilantro
Get ready for this sauce! It is delicious. It should do considering this chicken has the royal seal of approval.
What I love about the sauce the apricot preserves. The punch of sweetness gets stirred into the tangy mayo and fresh lemon juice. That is the first step!
You could make your own mayonnaise for this too.
Next comes the punch of spice. Curry powder! So British, right? haha It does make for a golden, regal-looking sauce.
Finally, stir in the cooked chicken along with fresh cilantro, green onions, and slivered almonds for some crunch!
I make a coronation chicken salad and serve this over a bed of greens and extend my pinky whilst I eat it. 😉
It is also lovely in sandwiches and wraps, for example. The Brits also enjoy it next to their jacket potatoes (baked potatoes).

- Why is it called coronation chicken? It was developed by a writer named Constance Spry and the founder of the famous Le Cordon Bleu cookery school Rosemary Hume. It was served to the upper crust at the banquet following the coronation of Queen Elizabeth II in 1953.
- How long can coronation chicken be refrigerated? Up to three days in the fridge. It’s actually even better the next day.
- TIP! Use poached chicken for this recipe! It is awesome in chicken salads. It’s in my rotation for meal prep during the summer so I always have tender cooked chicken on hand.
- TIP! For salads, I prefer cubed chicken but in sandwiches shredded is easier to eat.
- If you want to lighten this recipe up a little you can substitute Greek yogurt or creme fraiche. Just remember it won’t be dairy-free anymore.

Coronation Chicken
Ingredients
- ½ cup mayonnaise
- 1 tbsp lemon juice
- 2 tbsp apricot preserves *no sugar added*
- 1 tbsp curry powder
- 2 cups cubed or shredded cooked chicken
- 2 tbsp slivered almonds *omit for nut allergies
- 1 thinly sliced green onion
- 2 tbsp chopped cilantro
Instructions
- In a medium mixing bowl, stir together the mayonnaise, lemon juice, and apricot preserves.
- Add the curry powder and still well until the mixture is smooth.
- Stir the cooked chicken into the mixture and coat it well, then add the slivered almonds, sliced green onions, and chopped cilantro. Stir it all to combine.
- Serve over green for a salad or enjoy in a sandwich or wrap.
- Store any leftovers covered in the fridge for up to three days.
